Miraculin binds to the eater’s taste buds and for the next hour, turns sour and bitter into sweet! It alters the signals for acidic foods, tricking the tongue into telling the brain that sour and bitter are actually sweet. Lemons become like lemon sherbet, dark and bitter beers become very drinkable (to those who previously don’t enjoy such fare…to those who already love dark beers it will still be very different), and vinegar is dangerously delicious.
